Thanks to a path you will learn the history of the families that produce every day a unique and inimitable cheese, an expression of the territory to which it is linked; a splendid hill at 850 m of height which dominates the valley of the Dolo,the Dragone and the Secchia.

You will be able to live the experience of discovering the magic of production and the art of the cheesemaker who transforms milk into Parmigiano Reggiano, the best-known cheese in the world

Visiting a dairy is a real journey to discover Parmigiano Reggiano which for almost a thousand years has been produced with only 3 natural ingredients: milk, salt and rennet.

You will witness all the milk processing phases, from cooking to molding the curd, up to salting.

 

You will have the opportunity to see the maturing warehouse where the wheels rest and are cared for daily while waiting for the twelfth month when they will be evaluated by the experts of the Parmigiano Reggiano Consortium to be fire-branded and reach the right maturation.

How does it work?

Our cheesemaker Mario Ruffini will take you on a journey of taste where you can discover some “secrets” of the art of cheese making.

The tastings

At the end of the tour you will be able to taste the main maturations in which our Parmigiano Reggiano is expressed, savoring the differences in aroma and taste, but always united by the common thread of authenticity and the unmistakable flavor of quality.

In addition to Parmesan, we will let you taste our renowned ricotta and other products typical of our Reggio Apennines.

Zero kilometer sales
In the sales outlet you will find all our products, as well as many other typical specialties of the area, all coming from small local artisan producers.

Approximately 1 hour inside the dairy + final tasting

Availability

Visits can be booked from Tuesday to Sunday (it is advisable to arrive by 9.30am to be able to attend all phases).

Tasting

Flakes of parmesan cheese aged 12-24-30 months, fresh ricotta of the day, and other typical products, drinks included.
