A cheese with a bold taste and complex aromas. Out of the various ageing periods, it boasts the highest nutrient content and is known for its exceptional digestibility.

The texture is notably dry, crumbly, and granular, therefore making it very suitable for grating. Its white colour is characteristic of Mountain Parmigiano Reggiano, produced from the milk of cows raised in the mountains and fed on uncontaminated forage.


Excellent when paired with balsamic vinegar from Modena, walnuts, or dried fruit such as figs and prunes. Additionally, it pairs wonderfully with honey.
To be served alongside dry white wines, passitos, or full-bodied red wines.
